Grilled Cheese 240 Calories


Quick easy meal that is great for any meal.  A simple grilled cheese sandwich.  For me I don't have much dairy in my diet.  So I usually opt for this grilled cheese sandwich.  Place a slice of cheese inbetween 2 slices of bread.  Lightly butter each side of the sandwich and cook in a good non stick skillet or black iron skillet.  Grill on medium to medium low until browned.  Weighs in at only 240 calories.  Have this with a good glass of milk.  Just keep the calories under 400! A crucial part of everyone's diet is will power.  Second is portion control with good choices.  Third is physical exercise.

Pan Grilled Fish and Oven Roasted Vegetables

















Ok here is an easy and quick meal.  I seasoned my vegetables and fish using my olive oil seasoning blend link here:   http://happyhousebunkie.blogspot.com/2017/01/olive-oil-seasoning-blend.html .  I get the vegetables at Sam's Club in the fresh vegetable cooler by the celery, lettuce area.  For this serving I poured 4 cup of veggies (break cauliflower and broccoli into smaller pieces if needed) on a foil lined sheet pan for easy clean up for 3 people (I forgot to take a picture and the plate is one I had taken has cauliflower, broccoli, yellow squash and zucchini squash in it.  But you get the idea.  I will update this when I cook it again).  Follow these directions on how to bake it  http://southerndiet.blogspot.com/2016/09/baked-zucchini-squash-and-bell-peppers.html  .  As you see in the recipe you can use any fresh vegetables.  It takes about 2 minutes to prepare and 35 to 45 minutes to cook.  You kind of decide how cooked you prefer your veggies.   Ok for this serving of vegetables seen on the plate was 162 calories for 1 1/2 cups.  The fish I cooked in a real good nonstick skillet with a tablespoon of my oil blend and a tablespoon of butter and seasonings you prefer with 4 Members Mark tilapia fillets.  Each fillet is around 3 to 4 oz and should serve 4 people. In my case it served 3 because my daughter ate 2.   Cook on medium high or higher, when the butter starts to turn brown it's time to cook the fish.  Cook for 3 to 4 minutes per side.  Each serving of fish is 135 calories, that is for 3 oz.'s.  So this dish has a total of 297 calories.  If your really hungry you could add 1/2 a fish or some more veggies to your plate.  But keep it under 400 calories.  You can probably make it less calories than that by baking the fish.  But I prefer to cook my fish this way.  Because you know it's how southern women diet! lol

Egg In A Basket Breakfast

My Monday breakfast started with eggs and toast.  But I didn't want just eggs and toast.  So what did I fix.  Egg in a basket breakfast.  It is one of my kids favorite things.  You get a glass and cut out a hole in the middle of the bread.  Then butter the bread like you would for toast. Then put in the skillet and crack an egg in the middle.  Valois.. you got egg in a basket.   My morning time I wanted a snack so I finished up my pea salad.  Lunch was the leftover turkey ham, biscuit breakfast.  At this point I was doing real good on my calories.  I decided to have an afternoon snack of a few strawberries.  While I went to exercise I had my daughter bake some chicken wings and we had buffalo wings.  I finished it with a glass of milk to cool the spice.  But I love spice.  I check my calories again and I was doing wonderful.  Before bed I treated myself to 2 mini Halloween pieces of candy.  I finished the day with a total of 1108 calories for the day.  I was under my calories by 222.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Cheese Grit's and Grilled Hot Dog

For breakfast I made some homemade grits.  Or I attempted to.  I put the grits on to boil and my mom came behind me and put cheese in it.  Well I had budgeted a cup and a half of grits for breakfast.  Now with the addition of cheese I cut my portion to 1 cup of cheese grits.  So this is a case where you have to take into consideration what ingredients are put in the item to decide on a portion size.  I had a small snack between breakfast and lunch.  When lunch time came I ate the BBQ sausage and the half of my pork steak from the other day.  I had weighed it all before I left home to get my portion weight.   I went and did my 20 minutes of cardio and 40 min weight training when I got home.  My mother had all the items out for supper when I got home.  She wanted grilled hot dogs.  So she had this fancy Hawaiian bread and all the fixings out for the hot dogs and was cooking some hash browns.   I grilled the hot dogs and out of all the fixings I choose just mayonnaise.  I skipped on the cheese and everything else.  Next time I eat this kind of bun for my hot dog I will split the bun and only eat half with each hot dog link.  That evening I wanted something yummy as a snack and I got a snack size of a Butterfinger candy.   I finished the day with a total of 1137 calories for the day.  I was under by 193 calories.   So I really could have had 2 hot dogs with the one Hawaiian bun.  Oh well maybe next time.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Grilled Tuna Steak With Eggplant Fries

I started my Friday eating leftover pizza.  Which was very filling.  For lunch I ate my leftover biscuit with the chicken pot pie filling placed on top.  I did my food diary and found that my calories were just a little higher than I liked.  When it came time for a snack I grazed on some grapes.  After work I went did my 20 minute cardio and weight training the rest of the hour.  For supper I defrosted some grilled tuna steak and my mom had diced up an eggplant from the garden that we fried up like french fries.  Now I could have eaten a lot less fat by not frying the eggplant.  But, I live in Louisiana and I just didn't want to have it any other way.  Now I can say that the tuna steak is a great meat option.  A whole tuna steak from the Daily Chef products average 4oz each.  That tuna steak was seasoned with Montreal steak seasoning and grilled on a Sam's mini grill.  It weighed in at a whopping 120 calories and 1 fat.  There are not many meat options with that few calories for that much meat.  If you had beef roast that same 4oz would be 210 calories and 12 fats.  If you like meat and you are needing to drop calories and fat try you some tuna steak.  Just remember season and cook it just like a beef steak.  These steaks I cooked on a high flame, 3 minutes per side.  Yep in 6 minutes I was done cooking.  I finished the day with a total of 1172 calories for the day.  I was under my calories by 158.   I say that is pretty good after eating pizza for breakfast and a biscuit with pot pie mix on top that weighed in at 849 calories combined.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Scout Day Fundraisers

Today was an exhausting day.  We had 2 fundraisers going on at the same time for our Venturing Crew.  We are raising money to go to the National Jamboree in West Virginia.  Since it was a long day I didn't not keep track of my calories, but did keep track of portions.  Our first fundraiser began at 5:30 am by cooking breakfast for a side car bike group.  Since I knew it was so early in the morning and we wouldn't get to eat till around 9 I made me a southern grilled cheese.  Wow grill cheese was 240 calories.  Breakfast fundraiser was a hit.  Before we cleaned up the second fundraiser crew came in and we all ate together.  this was about 9:30 by this time.  I needed a snack.  I got a sausage with some jelly and a scrambled egg.  That was a big snack with 310 calories.  But I wasn't sure when I would eat again.  The second fundraiser crew helped clean up and we loaded the popcorn to go sell at the local grocery store.  A third crew came and some of the morning crew stayed.   We went make potato salad and several other things for the evening fundraiser with the bike people.  The others were still selling popcorn.  All crews took a break around 1 and we had Pizza Hut meal.  I ate just one slice of pizza, one bread stick and I really felt like I needed an orange Fanta.  Oh wow that was bad, 560 calories in that little bit of food and drink.  I went back with the popcorn crew after and we worked till 5pm.  We all went to the bike event and served supper.  One of our scouts also did an eagle dance and hoops for them.  We ate supper after everyone was served, which was 8pm.  We were starving.  Out of all the things they had, I skipped on most of them.  I settled for a huge serving of beef brisket and a helping of peach cobbler.   That big hunk of meat was nearly 600 calories.  I knew I shouldn't have, but I was so tired and hungry at this point.  We cleaned up and went home finally at 9:30 pm.  Summary is, I worked with scout group from 5 am to 9:30 pm. I borrowed my daughters Fitbit this week and I wore it today.   When I did have Fitbit on, it said I walked 13,500+ steps. I actually walked more because part of the day it fell off my arm and I had to find it.  I also took it off to wash dishes for 2 hours.   I finished the day with a total of 1837 calories for the day.  I was way over my calories by 507.   I did not log my exercise.  Because I don't really know what calories I actually burned.  I do know, I sat down when I ate and when I was in the car.  The rest of the day I either stood or walked.  I am sure I burned that extra calories I ate.  It was a rough day.   Moral of today's blog, don't starve if you are doing a lot in one day.  You may need those extra calories to keep you going.  I wasn't tired and I wasn't hungry.  The meals were spread far enough apart to not make a real big impact.  My home scale showed that my weight did not change from Friday.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Shrimp Gumbo & Pan Grilled Catfish

I wanted to finish cutting grass so I fixed me a egg and smoked sausage breakfast.  I worked out side all the way to lunch.  For lunch I had some catfish we didn't finish cooking,  I pan grilled it and topped it with some of the leftover crawfish etouffee.  Ohhh yummy.  Just the fish is only 216 calories for a large catfish fillet.  Add some of my oven roasted veggies at 1/2 cup for only 50 calories and you have yourself a very low calorie meal.  But I had some awesome crawfish etoufee instead.  lol   I had an afternoon coffee.  My meals went pretty well today.  My sister called and they had made an awesome shrimp gumbo.  I ate about 2 cups of gumbo and only put 1/3 cup of rice.  Remember keep it light.  You don't need shrimp rice and gravy from eating to much rice.  That gumbo was way under 300 calories.  The southern seafood gumbo's are lower in calories compared to traditional chicken and sausage.  The chicken we cook with the skin on and the sausage has some calories.  When making a chicken and sausage gumbo we usually skim the grease off the top before plating up our food.  With a seafood gumbo there is really no need to do that.   When my day ended I finally got to tally up my calories in the My Fitness Pal diary.  I had a whole lot of calories left.  I treated myself to some ice cream and chocolate syrup.  What an end to the day.  I finished the day with a total of 1125 calories for the day.   That is 205 under my calorie goal.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Pan Grilled Catfish with Crawfish Ettoufee

This was supposed to be my cheat day.  Saturday I ended up eating over my calories.  I tried real hard to stay within my budgeted calories.  No matter how hard I tried, it just didn't work out.  My daughter cooked breakfast, a FULL breakfast and for the first time.  I didn't want to insult her so I ate all of it.  I was going to go real light.  But you know crap happens.  I didn't have a snack all day.  I made pan grilled catfish with crawfish ettoufee.  My mom made potato salad and the toasted hamburger bun.  Oh how delish it was.  It was my mother's birthday and she requested chocolate cake.  The cake we make is fattening and I made it more fattening by adding caramel condensed milk, mini chocolate chips and pecans on top.  I found out that  you can easily calculate the cake using the recipe tab.  It came out to be 563 calories per serving. I went help out a friend and someone brought them some homemade hot bread.  Ugh I couldn't help it and had a slice for my supper.   I finished the day with a total of 1732 calories for the day.   That is over by 402 calories.    My day could have been a lot worse and I could have eaten a lot more.  I will have to make sure I behave for all of the remainder meals for this week.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Grilled Flank Steak & Creole Cushaw

I am a firm believer in leftovers.  So I prepared my meal plan to have my other half of my potato from yesterday and the leftover fried pickles.  I then added in my ingredients for my supper menu of grilled flank steak and creole cushaw.  Oh I also added my coffee.  I can't do without my coffee.  To figure out my servings for the creole cushaw (green winter squash), I entered all the ingredients in My Fitness Pal as the recipe stated.  Then I figured out how may servings I would like to get out of it.  In my case 3 pounds of cushaw (12 cups) will make a 14" black skillet full of creole cushaw.
I would make a minimum of 6 servings out of it.  I could do smaller ones and make it 8, but I'm not.  Then I divided each ingredient by 6 that's how I figured it out.  Ok so with my coffee, leftover lunch and my supper I have 42 calories left.  What? Ok I haven't entered my snack or breakfast.  Ok, I reworked my menu like this.  I put my potato for breakfast, kept my pickles for lunch and added 1/2 banana for a snack.  That will work.  Even though I didn't get much to eat for my morning and mid day meals, my supper was worth every calorie.  In the evening I went do my 1 hour of exercise since I missed Friday, which included 20 minutes of cardio and the rest of the time weight training. Another day of great meals for a total of 1343 calories for the day.  Only 13 calories over my budget.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Grilled Tuna Steaks, Fried Cabbage with Savois Sausage and Southern Eggs

How I start my day designing my day's meal plan is quite simple.  On Sunday I had planned my suppers for the week.  Then I thought of what I would like to eat for today and decided which supper meal I would choose.  I knew I wanted eggs with Savois Sausage for breakfast.  I entered my breakfast into the My Fitness Pal.  Then I added in the meals I had chosen to make this week and picked the one that had the less calories.  Because of the high fat in the sausage that I was going to use for breakfast and to make fried cabbage,  I choose the tuna for my supper.  The tuna only had 150 calories and 1g of fat for 4oz of meat.   It may seem like an expensive cut of meat but it only cost $1.75 per steak.   I made my breakfast, planned my meal for supper and headed to work.  When I got to work I grazed on half a Cutie orange till lunch.  Graze? Yes I ate one slice of my orange every 30 minutes.  I started the grazing when I started to feel hungry.  For lunch I picked some sort of leftover item I had at the office.  The winner was half a box of fried rice.  For the afternoon I like to eat a snack.  So I went to the My Fitness Pal and figured out how I was doing with my calories.  At this point I was doing great.  I choose peanuts and grazed till I left work.  See if I was not doing good with my calories I would have chosen 1/2 cup of grapes instead.  When I got home I did my 1 hour of exercise, which included 20 minutes of cardio and the rest of the time weight training.  I went home to cook my tuna supper.  I cooked it on a gas grill on high for 3 minutes per side, my mom made the fried cabbage and my daughter found a box of tuna helper minus the tuna to complete the nights menu.   Later in the evening I checked to make sure I had entered all of my food in my diary and that the portions were correct.  I still had an extra 300 calories left for the day.  My mom had made cook chocolate pudding and I treated myself to 1/2 cup.  As  you see I ate pretty good for the day and I only ate 1113 calories for the day.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes!
