Pan Grilled Fish and Oven Roasted Vegetables

















Ok here is an easy and quick meal.  I seasoned my vegetables and fish using my olive oil seasoning blend link here:   http://happyhousebunkie.blogspot.com/2017/01/olive-oil-seasoning-blend.html .  I get the vegetables at Sam's Club in the fresh vegetable cooler by the celery, lettuce area.  For this serving I poured 4 cup of veggies (break cauliflower and broccoli into smaller pieces if needed) on a foil lined sheet pan for easy clean up for 3 people (I forgot to take a picture and the plate is one I had taken has cauliflower, broccoli, yellow squash and zucchini squash in it.  But you get the idea.  I will update this when I cook it again).  Follow these directions on how to bake it  http://southerndiet.blogspot.com/2016/09/baked-zucchini-squash-and-bell-peppers.html  .  As you see in the recipe you can use any fresh vegetables.  It takes about 2 minutes to prepare and 35 to 45 minutes to cook.  You kind of decide how cooked you prefer your veggies.   Ok for this serving of vegetables seen on the plate was 162 calories for 1 1/2 cups.  The fish I cooked in a real good nonstick skillet with a tablespoon of my oil blend and a tablespoon of butter and seasonings you prefer with 4 Members Mark tilapia fillets.  Each fillet is around 3 to 4 oz and should serve 4 people. In my case it served 3 because my daughter ate 2.   Cook on medium high or higher, when the butter starts to turn brown it's time to cook the fish.  Cook for 3 to 4 minutes per side.  Each serving of fish is 135 calories, that is for 3 oz.'s.  So this dish has a total of 297 calories.  If your really hungry you could add 1/2 a fish or some more veggies to your plate.  But keep it under 400 calories.  You can probably make it less calories than that by baking the fish.  But I prefer to cook my fish this way.  Because you know it's how southern women diet! lol

Pork Patty Pantoletes and Weigh In Results

Well I went to exercise and did my weigh in.  As I said yesterday I didn't make good choices this past week and was even skipping some meals and snacks.  I had gained 2 pounds.  I started eating all my meals since this past Thursday.  Today's weigh in did show I lost the 2 pounds I gained and I lost an additional 2 more.  I am now down to 201 lbs.  Yay me.  So yes even though most days I was under my calories it did make a difference that I didn't eat all my meals.  Ok I need to make it a point to eat 3 meals and a snack when I feel hungry. 

For breakfast I had a Jimmy Dean breakfast sandwich.  It is a high calorie and fat item.  When I finish this box I don't think I am buying it again.  It was over 400 calories and I was hungry within an hour of eating it.  I grazed on some popcorn till lunch.  For lunch I had leftover parmesan fish and potatoes.  Supper time we ate a southern pork patty wrapped in animal casing.  My family calls them pant-o-letes.  I know it's not spelled right.  Can't find the correct spelling for it.  Very few meat markets make them here. I bought these in Cottonport at T-Jim's.  Oh it is so flavorful.  We had it with some baked veggies with garbanzo beans.  Then my mom picked an eggplant out of the garden and fried us some.  Oh what a perfect end to my day.  I lost weight and ate some yummy stuff.

I finished the day with a total of 1315 calories for the day.  I was under my calories by 15.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Meatloaf Baked Potato

For breakfast I had scrambled eggs with a slice of ham thrown in it.  Quick and easy meal.  For lunch I choose from my many leftovers.  I picked the leftover beef roast and sweet potatoes even though it was a little high in calories.  I could eat the extra calories since I knew what I was eating for supper.  I entered in my breakfast and supper in the food diary and that is how I figured out what I would be eating for lunch.  Supper I had a quarter of the leftover baked potato with a meatloaf my mother cooked in the crock pot.  She basically made the meatloaf and wrapped it and cooked in aluminum foil.  I saved a few calories using the low calorie sour cream.  I went exercise that evening and did my 20 minutes of cardio and the rest of the time weight training.  I finished the day with a total of 1164 calories for the day.  I was 166 under my calorie goal.    Another great day!  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Women's Church Dinner Baked Potato

For breakfast I choose a light meal.  One egg over easy with one slice of bacon.  For a snack I brought an apple to work.  I grazed on it most of the morning.  For lunch I had the last of my leftover crawfish ettoufee and catfish.  Then of course someone at work just had to bring a cake to the office.  I tried really hard to not eat it.  I felt tortured just to have it.  So I cut a very small sliver just to get a taste.  When I got home I did 20 minutes of cardio.  I sat down to see in the My Fitness Pal diary how my calories were going.  I still had about 600 calories left for my evening meal.  We had a women's dinner at the church.  They served us a HUGE baked potato, see photo.  You had almost every topping available, including chili.  But I kept it simple.  I put butter, sour cream and cheese.  I skipped the desert's.  The potato was so large I knew I shouldn't eat the whole thing.  I ate half.  WOW later I found out that just half was right at 400 calories.  So if I had the whole potato I would have went over and if I had a desert I really would have went over.  Remember that just because it's there we don't have to eat it all.  I finished the day with a total of 1297 calories for the day.  I was 35 under my calorie goal.    Another great day!  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Baked Zucchini Squash and Bell Peppers

This day was nothing really special.  I knew that most of my meals would be leftovers.  I wanted to eat a large serving of the crock pot pork ribs.  I entered the ribs, the leftover pizza from my daughter's outing and an egg for breakfast.  I had quite a few calories left so I allowed myself a couple of snacks for the day.  I found some yellow squash and zucchini on sale.  I bought a bunch of them.  I figured that would be perfect in case my 5oz of meat I budgeted wasn't enough.   A 1/2 cup of baked veggies was only around 50 calories.  I weighed my meat and realized that 5oz was plenty.  When I was through with my plate, I went back for seconds just on the veggies.  Oh how great they were.  See you dice up all your veggies as seen in the photo.  I use an olive oil seasoning that I make to lightly coat them.  I cut up around 4 zucchini's, 4 squash and 3 bell peppers.  I tossed the whole thing with about 3 tablespoons of the olive oil mix (Mix now available @  http://happyhousebunkie.blogspot.com/2017/01/olive-oil-seasoning-blend.html ).  Bake at 450 for 35-40 minutes.   When done, take out of the oven and lightly salt and pepper it.  That's it!  Yuuuuumy.    I checked my calories at the end of the day and realized I still had a few more calories I could have.  So I had a half of a half serving of the leftover turtle cake.  I finished the day with a total of 1392 calories for the day.   That is 62 calories over my goal.   Damn that turtle cake.   See if your like me, make the temptation go away!  It really does need to go away.  Its just so darn delicious.  Ugh..........   I have a girl get together Friday night.  If the cake is still there it's coming with me.  I need help eating this cake!  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Southern Fried Catfish and Fried Pickles

When I made my meal plan for the week I forgot that it was payday.  That means we go out to eat something special.  This type of eating out can go 2 ways.  1. eat what you want most of the day without going to crazy, as a cheat day or 2.  do some serious work on your meal plan to get it right.  I choose option 2 because I think Saturday or Sunday might be my cheat day.  In the My Fitness Pal I entered in what I normally order to eat from the Katfish Kitchen restaurant in Eola, Louisiana.  Which is a 3 piece catfish with either a baked potato or French fries and fried pickles for an appetizer.  I checked the calories for the fries and potato.  The potato won to reduce the fat intake.   My portion size will be only 1/2 of the potato.   Now to work hard on what to eat for breakfast and lunch.  I only have 501 calories for breakfast, lunch and snacks.  I picked oatmeal for breakfast.  I usually do 2 servings but will have to settle for 1.  I will graze on apples at both of my snack times.  Then I only had 200 calories approximately left for lunch.  I picked a protein meal bar.  Well things changed again. I purchased a Sam's Club
rotisserie chicken for my mom at 7am.  Well that was pure torture, it was hot, smelled amazing and was staring me in the face.  So I opted to eat a chicken leg and a little of the thigh for 3oz of chicken.  I weighed the chicken without the skin and bone.  Then I moved my oatmeal breakfast to lunch and decided not to eat the protein bar.  See I was only eating the protein bar because I needed more protein in my diet for the day.  Well I got my protein eating the chicken for breakfast.  I wasn't really hungry for a snack, but this one chocolate chip cookie I haven't eaten yet said "Eat me before I go bad." I gave in and skipped the apple grazing.  That chicken and oatmeal did a good job at satisfying my hunger.  I didn't have an afternoon snack either.  We went eat at 5:30, better to eat that fattening meal early.  I ate exactly what I budgeted and took the leftovers home.  Another day of great meals for a total of 1361 calories for the day.  Not bad for a meal eating out, only 31 calories over my budget.  I know, I know,  I could have been under 17 calories if I would have eaten the apple instead.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes!
