Loose Hamburger Steak Sandwich 410 Calories


Here is a quick meal.  Saute onions and bell peppers in a good non stick skillet to your desired tenderness.  Set aside when completed.  In the same skillet brown and cook your ground meat.  Sprinkle a little powdered brown gravy mix to thicken and season up with some Cajun seasoning.  I served myself 3 ounces of meat on this fancy white bolillo roll from Walmart.  Sprinkled with some sauteed veggies and one slice of low calorie cheese.  You can save yourself some calories if you omit the cheese.  The cheese I  used has 40 calories.  The bread is 210 calories. This meal weighs in at 410  calories.

Pan Seared Steak and Baked Vegetables 

Using the Olive Oil Blend


This seasoning blend has been a favorite cooking ingredient in our kitchen. I have decided to make it available for everyone. You simply place the seasoning blend into a quart of olive oil. Let sit over night. Use it in place of oil when browning, basting breads, pizza crusts, baked vegetables, ect......seasoning blend is available for only $2

This meal of pan fried steak and baked vegetables was prepared with the olive oil seasoning blend and was a great treat on my diet.  I had 6oz of rib eye and 1 cup of veggies.  Measured right around 525 calories.   This is a treat that is.  You can save some calories by doing a smaller portion of meat.  I took the Sam's Club Angus Rib-eye and placed in the fridge for about 30 minutes to firm it up.  I took an electric knife and sliced the cuts in half longways.  So my 3 steaks turned into 6.   Pour around 2 tablespoons of olive oil blend to your black skillet.  Toss steak in the oil coating both sides.  Set steak aside and get the pan hot.  Return steak to skillet, season with desired seasonings and cook on both sides to desired temperature. Weekend Work Pancakes Steak and Breakfast Burrito

October is a very busy month for me.  For the weekend I winged it with what I have been learning about eating within my calories.   I didn't log my food in my diary until Monday.  Except Saturday I was so hungry for pancakes.  I made 1 cup of mix and me and my mom split it.  I had my generous helping of butter and syrup.  I learned on Monday that it was a whopping 733 calories I ate just for breakfast.  OMG..  I knew it was a lot but did not expect it that high.  I went help at the church doing a sewing project.  They had subway sandwiches and fried chicken with chips, desert and drinks.  I Picked one piece of fried chicken and skipped the rest.  Now at this point I knew I was probably over my calories.  For supper I rummaged through the fridge and found 2 hot dogs that needed to be eaten.  Do I make a hot dog or just eat the hot dog without the bread and stuff.  Well I picked to just eat the meat.  I finished Saturday with a total of 1448 calories for the day.  That was over my calories by 118.   Wow I did great.  So if I would have had the fixings with lunch and had a real hot dog with the bun and stuff I would have been way way over.  Do that was awesome.  On Sunday I was hungry for a homemade breakfast burrito.  I forgot to eat the wheat tortillas I had, carb smart wheat ones.  For lunch instead of eating out at a restaurant I bought us steaks to grill at home.  That is always a good treat.  But just to let you know.  I buy the rib eye steaks from Sam's.  They usually come 3 to a pack.  I actually stick the steaks in the freezer for half an hour to firm up.  Then I take and electric knife and slice them longways in half (see photo).  I end up with 6 steaks.  So I cooked 3 and I have 3 for another day.  That one steak not cut in half would be an enormous amount of calories.  I weighed my steak at 8oz I knew that would be a lot of calories.  I had made baked squash, cauliflower and garlic cloves to go with it.  For supper I ate more vegetables with a cup of milk and called it a day.  Amazingly my daily calories were only 1174 for the day.  I was UNDER by 156 calories.  I think I can do this.  I can regulate my diet for a lifetime.  I might still do the my fitness pal to make sure I stay on track.   I will probably change the diary to how to eat healthy for a lifetime and how to portion for dieting.  I will see when I get there.   Even though I went over my calories one day I was very active.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Grilled Tuna Steak With Eggplant Fries

I started my Friday eating leftover pizza.  Which was very filling.  For lunch I ate my leftover biscuit with the chicken pot pie filling placed on top.  I did my food diary and found that my calories were just a little higher than I liked.  When it came time for a snack I grazed on some grapes.  After work I went did my 20 minute cardio and weight training the rest of the hour.  For supper I defrosted some grilled tuna steak and my mom had diced up an eggplant from the garden that we fried up like french fries.  Now I could have eaten a lot less fat by not frying the eggplant.  But, I live in Louisiana and I just didn't want to have it any other way.  Now I can say that the tuna steak is a great meat option.  A whole tuna steak from the Daily Chef products average 4oz each.  That tuna steak was seasoned with Montreal steak seasoning and grilled on a Sam's mini grill.  It weighed in at a whopping 120 calories and 1 fat.  There are not many meat options with that few calories for that much meat.  If you had beef roast that same 4oz would be 210 calories and 12 fats.  If you like meat and you are needing to drop calories and fat try you some tuna steak.  Just remember season and cook it just like a beef steak.  These steaks I cooked on a high flame, 3 minutes per side.  Yep in 6 minutes I was done cooking.  I finished the day with a total of 1172 calories for the day.  I was under my calories by 158.   I say that is pretty good after eating pizza for breakfast and a biscuit with pot pie mix on top that weighed in at 849 calories combined.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Philly Cheese Steak Sandwich and Spoiled Meal Plan

I had plans to eat real good today.  I ate a small breakfast of the Jimmy Dean stuffed hash brown.  Then I left the office to do some field work.  I was out all day till 2pm.  That meant I had to eat out.  Ugh....  Well I stopped at a restaurant.  Yea I had a wide variety of options and could have picked a lighter option.  But, I knew I had plenty of calories left for the day and if I have beans for supper I will be pretty close to where I needed to be.  Which my breakfast and lunch equaled 1264 calories.  I had 66 calories left for the day and I had some left over beans waiting at home that was only 147 calories. Which would only put me over by 81 calories.   So I ate a Philly cheese steak sandwich with onion rings, I have been dying to try out.   I went work out with my 20 minutes of cardio and 40 minutes of weight training.  I headed home afterwards.  When I got home my mother had cooked hamburgers and french fries.  Well that just ruined my plans.  Not to insult my mom I ate the burger but no fries.  The burger was basic, complete with a bun, tablespoon of mayo and the meat patty.  I would have loved to add cheese to it, but I didn't.  I finished the day with a total of 1794 calories for the day.  Which put me way over by 464 calories.  Ugh that was depressing.  I will use this as my cheat/splurge day.  I can't have too many of those kind of days.  So I will see if I can keep it under control the rest of the week.  Saturday will be hard.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Shrimp Steak Chicken Fajita's

Well this day was not so good.  I started off great having just a slice of bread with one breakfast sausage on it.  Then I went to work and meet with a store owner to review records at Shipley Donuts.  Well of course he tortured me with a donuts and I ate one.  Then by the time I finished a friend was driving through from Shreveport and wanted to eat out for lunch.  Well I  thought I was eating light picking the combination fajita's.  That meal was estimated to be almost 800 calories.  We didn't eat the chips and dip. Ugh......  I pretty much didn't have any calories left for supper.  I sure wish I had my bean soup with me.  I brought it to work for a leftover meal.  Ugh.... So I ate a quarter of a potato and a slice of the leftover meatloaf.  I didn't have time to exercise too.  Ugh.... I finished the day with a total of 1571calories for the day.  I was over 361 calories or more.  There was a couple of things I just didn't get to enter like the beans.    Well I guess this is my treat/cheat day!  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Beef Potato Carrot Rice & Gravy

When I went to bed last night I realized that my daughter had some left over donut twists from Sunday.  As you have heard me say before I hate to waste leftovers.  With that said, I ate one for breakfast with my coffee.  At work we had done a few business assessments.  I brought me a protein bar for a snack.  I was only a little hungry so I ate half.  We made it back to the office in time to eat one of my leftover lasagna's instead of eating out.  My left over meals were just delish.  Once home I did my 45 minutes of cardio.  For supper my mom made homemade chopped steak, potato, carrot rice and gravy.  I had a great day for meals for a total of 1098 calories for the day.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Grilled Flank Steak & Creole Cushaw

I am a firm believer in leftovers.  So I prepared my meal plan to have my other half of my potato from yesterday and the leftover fried pickles.  I then added in my ingredients for my supper menu of grilled flank steak and creole cushaw.  Oh I also added my coffee.  I can't do without my coffee.  To figure out my servings for the creole cushaw (green winter squash), I entered all the ingredients in My Fitness Pal as the recipe stated.  Then I figured out how may servings I would like to get out of it.  In my case 3 pounds of cushaw (12 cups) will make a 14" black skillet full of creole cushaw.
I would make a minimum of 6 servings out of it.  I could do smaller ones and make it 8, but I'm not.  Then I divided each ingredient by 6 that's how I figured it out.  Ok so with my coffee, leftover lunch and my supper I have 42 calories left.  What? Ok I haven't entered my snack or breakfast.  Ok, I reworked my menu like this.  I put my potato for breakfast, kept my pickles for lunch and added 1/2 banana for a snack.  That will work.  Even though I didn't get much to eat for my morning and mid day meals, my supper was worth every calorie.  In the evening I went do my 1 hour of exercise since I missed Friday, which included 20 minutes of cardio and the rest of the time weight training. Another day of great meals for a total of 1343 calories for the day.  Only 13 calories over my budget.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Grilled Tuna Steaks, Fried Cabbage with Savois Sausage and Southern Eggs

How I start my day designing my day's meal plan is quite simple.  On Sunday I had planned my suppers for the week.  Then I thought of what I would like to eat for today and decided which supper meal I would choose.  I knew I wanted eggs with Savois Sausage for breakfast.  I entered my breakfast into the My Fitness Pal.  Then I added in the meals I had chosen to make this week and picked the one that had the less calories.  Because of the high fat in the sausage that I was going to use for breakfast and to make fried cabbage,  I choose the tuna for my supper.  The tuna only had 150 calories and 1g of fat for 4oz of meat.   It may seem like an expensive cut of meat but it only cost $1.75 per steak.   I made my breakfast, planned my meal for supper and headed to work.  When I got to work I grazed on half a Cutie orange till lunch.  Graze? Yes I ate one slice of my orange every 30 minutes.  I started the grazing when I started to feel hungry.  For lunch I picked some sort of leftover item I had at the office.  The winner was half a box of fried rice.  For the afternoon I like to eat a snack.  So I went to the My Fitness Pal and figured out how I was doing with my calories.  At this point I was doing great.  I choose peanuts and grazed till I left work.  See if I was not doing good with my calories I would have chosen 1/2 cup of grapes instead.  When I got home I did my 1 hour of exercise, which included 20 minutes of cardio and the rest of the time weight training.  I went home to cook my tuna supper.  I cooked it on a gas grill on high for 3 minutes per side, my mom made the fried cabbage and my daughter found a box of tuna helper minus the tuna to complete the nights menu.   Later in the evening I checked to make sure I had entered all of my food in my diary and that the portions were correct.  I still had an extra 300 calories left for the day.  My mom had made cook chocolate pudding and I treated myself to 1/2 cup.  As  you see I ate pretty good for the day and I only ate 1113 calories for the day.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes!
