Seafood Platter With Sweet Potato Waffles

For breakfast I ate some leftover cheese grits.  Just because I didn't want to waste them.  I was going to go home early to work on a few things for my evening event and had a light meal planned.  When I got home my mom had purchased a piece of fried chicken and boiled a potato to make bake potatoes.  Well I cut my potato in half and went to put on the butter and then the sour cream.  The sour cream was spoiled.  So I took my other half of the potato and made a buttered potato instead.  lol  Make do I say.  My event started at 3 pm for me so I brought me a cheese cake bar as a snack.  I had planned on eating when the presentation started around 7.  I needed something to eat before then.  Well last year they served finger foods.  Later in the event all I saw flying around the room was cake.  I was really hungry by 8 pm so I ate a piece of cake.  Oh the sinfulness of having to resort to eating that cake.  I knew I was going over on my calories.  I had my mom with me and by the time the event ended it was 10pm.  She was starving, so we went eat at Roxy's.  We looked at the menu and nothing spoke to us like the seafood platter.  We opted to split the plate.  I wanted the fried oysters and she wanted the fried shrimp and fish.  I took my oysters and a few sweet potato fries to complete my plate.  Look at what was still left in the platter!  My mom didn't event finish half of it and we took a full plate home with us.  This plate was HUGE!  So in reality 3 people could make a meal off this plate of food. Looking at my calories now I did a great job with my last meal under the circumstances.  I really could have done a lot worse.  I could have eaten some of the fish, shrimp or more fries.  I was full and ready for bed at that point.  I could have waited to eat when I got  home buy my mom felt she couldn't wait.  I finished the day with a total of 1714 calories for the day.  I was over by 384 calories.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Meatloaf Baked Potato

For breakfast I had scrambled eggs with a slice of ham thrown in it.  Quick and easy meal.  For lunch I choose from my many leftovers.  I picked the leftover beef roast and sweet potatoes even though it was a little high in calories.  I could eat the extra calories since I knew what I was eating for supper.  I entered in my breakfast and supper in the food diary and that is how I figured out what I would be eating for lunch.  Supper I had a quarter of the leftover baked potato with a meatloaf my mother cooked in the crock pot.  She basically made the meatloaf and wrapped it and cooked in aluminum foil.  I saved a few calories using the low calorie sour cream.  I went exercise that evening and did my 20 minutes of cardio and the rest of the time weight training.  I finished the day with a total of 1164 calories for the day.  I was 166 under my calorie goal.    Another great day!  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Pork With Garlic Mashed Potatoes & White Chocolate Bread Pudding

I had a meeting at work today and I just know we are going to eat out.  For breakfast I had a little lonely egg.  Of course the meeting lasted extra long and I had to have something to eat.  All I could find was this little brownie.  Ugh that little brownie was 146 calories and I only ate half, a 2x2 inch piece.  Dang if I ate the whole thing it would have been almost 300 calories.  Watch out for those little snacks.  For lunch we went to the Word of Mouth CafĂ©.  I got the plate lunch of pulled pork.  I split my plate with a little friend.  I gave her half my pork, potatoes and green beans you see in the photo.  I gave her all of my corn.  Of course it comes with white chocolate bread pudding and I ate all of it.  I really didn't have time to enter my food diary, but late that evening I figured out that half was still 678 calories! OMG.  The bread pudding was almost 400 calories! I went and did weight lifting and 3 hours of cleaning.  For supper I ate the other half of my leftover Sunday dinner.  I did not eat the sweet potato nor the cole slaw.  I just knew that the lunch meal was over.  I had a quarter cup of ice cream just because it was sitting on the counter.  My darn mom.   I finished the day with a total of 1411 calories for the day.  I was 201 calories over my goal.   Like I keep saying it is hard to eat out and stay on track.  This week will be exceptionally hard, because I will be eating out again Thursday, Friday and possibly Saturday.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Women's Church Dinner Baked Potato

For breakfast I choose a light meal.  One egg over easy with one slice of bacon.  For a snack I brought an apple to work.  I grazed on it most of the morning.  For lunch I had the last of my leftover crawfish ettoufee and catfish.  Then of course someone at work just had to bring a cake to the office.  I tried really hard to not eat it.  I felt tortured just to have it.  So I cut a very small sliver just to get a taste.  When I got home I did 20 minutes of cardio.  I sat down to see in the My Fitness Pal diary how my calories were going.  I still had about 600 calories left for my evening meal.  We had a women's dinner at the church.  They served us a HUGE baked potato, see photo.  You had almost every topping available, including chili.  But I kept it simple.  I put butter, sour cream and cheese.  I skipped the desert's.  The potato was so large I knew I shouldn't eat the whole thing.  I ate half.  WOW later I found out that just half was right at 400 calories.  So if I had the whole potato I would have went over and if I had a desert I really would have went over.  Remember that just because it's there we don't have to eat it all.  I finished the day with a total of 1297 calories for the day.  I was 35 under my calorie goal.    Another great day!  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Beef Potato Carrot Rice & Gravy

When I went to bed last night I realized that my daughter had some left over donut twists from Sunday.  As you have heard me say before I hate to waste leftovers.  With that said, I ate one for breakfast with my coffee.  At work we had done a few business assessments.  I brought me a protein bar for a snack.  I was only a little hungry so I ate half.  We made it back to the office in time to eat one of my leftover lasagna's instead of eating out.  My left over meals were just delish.  Once home I did my 45 minutes of cardio.  For supper my mom made homemade chopped steak, potato, carrot rice and gravy.  I had a great day for meals for a total of 1098 calories for the day.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Southern Fried Catfish and Fried Pickles

When I made my meal plan for the week I forgot that it was payday.  That means we go out to eat something special.  This type of eating out can go 2 ways.  1. eat what you want most of the day without going to crazy, as a cheat day or 2.  do some serious work on your meal plan to get it right.  I choose option 2 because I think Saturday or Sunday might be my cheat day.  In the My Fitness Pal I entered in what I normally order to eat from the Katfish Kitchen restaurant in Eola, Louisiana.  Which is a 3 piece catfish with either a baked potato or French fries and fried pickles for an appetizer.  I checked the calories for the fries and potato.  The potato won to reduce the fat intake.   My portion size will be only 1/2 of the potato.   Now to work hard on what to eat for breakfast and lunch.  I only have 501 calories for breakfast, lunch and snacks.  I picked oatmeal for breakfast.  I usually do 2 servings but will have to settle for 1.  I will graze on apples at both of my snack times.  Then I only had 200 calories approximately left for lunch.  I picked a protein meal bar.  Well things changed again. I purchased a Sam's Club
rotisserie chicken for my mom at 7am.  Well that was pure torture, it was hot, smelled amazing and was staring me in the face.  So I opted to eat a chicken leg and a little of the thigh for 3oz of chicken.  I weighed the chicken without the skin and bone.  Then I moved my oatmeal breakfast to lunch and decided not to eat the protein bar.  See I was only eating the protein bar because I needed more protein in my diet for the day.  Well I got my protein eating the chicken for breakfast.  I wasn't really hungry for a snack, but this one chocolate chip cookie I haven't eaten yet said "Eat me before I go bad." I gave in and skipped the apple grazing.  That chicken and oatmeal did a good job at satisfying my hunger.  I didn't have an afternoon snack either.  We went eat at 5:30, better to eat that fattening meal early.  I ate exactly what I budgeted and took the leftovers home.  Another day of great meals for a total of 1361 calories for the day.  Not bad for a meal eating out, only 31 calories over my budget.  I know, I know,  I could have been under 17 calories if I would have eaten the apple instead.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes!
