Pork Roast

Pork Roast

This meal is super duper easy to prepare.  Take a pork roast around 5 to 7 pound range.  The one in the picture is an extra large double one from Sam's.  This makes a great crock pot, pressure cooker and if your home bake it in the oven type of meal.  Simply rub the entire contents of the Happy House special rub (available at  http://happyhousebunkie.blogspot.com/2017/01/pulled-pork-spice-rub.html )  onto a 5 to 7 pound pork roast.  Wrap the roast tightly in saran wrap and marinate overnight.  This meal does not require browning.  If you cook your roast in the oven bake at 250 for 8 hours.  If you are cooking in the crock pot, cook on low for 8 hours.  If you have a pressure cooker follow the directions for the cooking time for your unit.  This meal consists of 2 separate uses in one.  When we first cook this dish, we eat as a roast with some healthy sides.  This is only 210 calories for 4oz of meat.  Then we take the leftovers with the juices and shred into pulled pork.  Add your favorite BBQ sauce to it and serve over a bun.  In my case a tablespoon of Sweet Baby Ray's and a Great Value hamburger bun weighs in at 365 calories.  Sorry you don't get anything else to eat with the sandwich.  But, you could do celery or something like that.  It is so delicious.  A crucial part of everyone's diet is will power.  Second is portion control with good choices.  Third is physical exercise.

Pork Patty Pantoletes and Weigh In Results

Well I went to exercise and did my weigh in.  As I said yesterday I didn't make good choices this past week and was even skipping some meals and snacks.  I had gained 2 pounds.  I started eating all my meals since this past Thursday.  Today's weigh in did show I lost the 2 pounds I gained and I lost an additional 2 more.  I am now down to 201 lbs.  Yay me.  So yes even though most days I was under my calories it did make a difference that I didn't eat all my meals.  Ok I need to make it a point to eat 3 meals and a snack when I feel hungry. 

For breakfast I had a Jimmy Dean breakfast sandwich.  It is a high calorie and fat item.  When I finish this box I don't think I am buying it again.  It was over 400 calories and I was hungry within an hour of eating it.  I grazed on some popcorn till lunch.  For lunch I had leftover parmesan fish and potatoes.  Supper time we ate a southern pork patty wrapped in animal casing.  My family calls them pant-o-letes.  I know it's not spelled right.  Can't find the correct spelling for it.  Very few meat markets make them here. I bought these in Cottonport at T-Jim's.  Oh it is so flavorful.  We had it with some baked veggies with garbanzo beans.  Then my mom picked an eggplant out of the garden and fried us some.  Oh what a perfect end to my day.  I lost weight and ate some yummy stuff.

I finished the day with a total of 1315 calories for the day.  I was under my calories by 15.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Pork With Garlic Mashed Potatoes & White Chocolate Bread Pudding

I had a meeting at work today and I just know we are going to eat out.  For breakfast I had a little lonely egg.  Of course the meeting lasted extra long and I had to have something to eat.  All I could find was this little brownie.  Ugh that little brownie was 146 calories and I only ate half, a 2x2 inch piece.  Dang if I ate the whole thing it would have been almost 300 calories.  Watch out for those little snacks.  For lunch we went to the Word of Mouth CafĂ©.  I got the plate lunch of pulled pork.  I split my plate with a little friend.  I gave her half my pork, potatoes and green beans you see in the photo.  I gave her all of my corn.  Of course it comes with white chocolate bread pudding and I ate all of it.  I really didn't have time to enter my food diary, but late that evening I figured out that half was still 678 calories! OMG.  The bread pudding was almost 400 calories! I went and did weight lifting and 3 hours of cleaning.  For supper I ate the other half of my leftover Sunday dinner.  I did not eat the sweet potato nor the cole slaw.  I just knew that the lunch meal was over.  I had a quarter cup of ice cream just because it was sitting on the counter.  My darn mom.   I finished the day with a total of 1411 calories for the day.  I was 201 calories over my goal.   Like I keep saying it is hard to eat out and stay on track.  This week will be exceptionally hard, because I will be eating out again Thursday, Friday and possibly Saturday.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Crock Pot Pork Spare Ribs

This day was the last of my very busy week.  Busy it was.  Thank goodness we had lots of crock pot meals to eat.  This Saturday was no different.  I was going shopping with a friend and we were supposed to leave at 9am and return by 2:30 am.  I started my day with eating 2 eggs over easy with toast.  Oh how I love to eat that.  I entered it into My Fitness Pal.  The rest of the day I had to guestimate since I can't search items on my phone.  This is how the 1,330 calorie diet can go seriously wrong.  Especially if you don't plan like me to have some healthy meal alternatives and healthy snacks to have on hand.  I put my crock pot pork spare ribs on to cook.   I just put a lot of seasoning and spices together and made like a rub on it.  I couldn't find any ground mustard in my cabinet.  I used regular mustard instead, that's the yellow stuff you see on top.  I left and went to her house by 9am.  By the time we got things together to go out of town shopping it was 11:30.  There was talks of shopping first and then getting a bite to eat.  I seriously needed a snack to hold me over.  So I grabbed 6 club crackers and headed out the door.  We went shopping.  We had lunch around 2pm.  Yea I would have died if I didn't have a snack.  We ate at Sam's Club deli.  Choices, to many unhealthy choices.  I decided to just pick something I was hungry for.  The winner was a 3 meat pizza.  It was hot and fresh.  We made it back home around 5pm.  I had a few errands to do before I could finish my day.  I left her house and started my errands. I had some cleaning to do, grass to cut and groceries to unload before I could eat supper.  At my cleaning chore I dug around for something healthy to eat.  All I could find was a huge variety bag of chips.  Yea I got one.  I finished my work, cut some grass.  The sun was still shining and I cut some more grass.  Then I seen more grass to cut and kept going till I had most of it done.  I still have some to do as I have almost 3 acres to cut.  It was dark by this time.  I sat down to eat my crock pot ribs at 8:30 pm.  I was to tired to fix any sides with it.   I just placed me a large helping on the plate and measured 1 cup of milk to drink with it.  I weighed the whole plate with the ribs on it.  After I ate, I weighed the plate with the bones.  I subtracted the weight and I had eaten 9oz of meat.  Oh my!  No turning back now.  The food is already being processed in my belly.  I pondered if I should even waste my time to see how many calories I had consumed.  But, yes I do.  That way tomorrow I can adjust and maybe counter act the damage from today.  I entered my snack, then the pizza and finished with the pork and milk.  OH MY!   I went over my calories by 590 calories for a total of 1920 calories for the day.  I so did not want this to be my cheat day.  I have me and my mom's birthday coming up on Monday and I wanted that to be my cheat day.  Ugh......... I had a lot of exercise that probably made it ok.  There is no real way to estimate the calories I did burn from shopping, cleaning and cutting grass.   I never enter those estimated calculations in the My Fitness Pal program.   For my weight loss I like to keep my calories at the 1330 total with or without exercise anyway.   I've got some serious dieting choices to do the next couple of days to fix this awful meal of a day.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Cabbage Casserole

For breakfast I finished off my leftover banana bread.  Oh it was soo yummy, just as good as the first day.  I knew I would eat leftovers for lunch and I knew what my menu was for supper.   I entered all my items in the My Fitness Pal to see where I was at in the calories.  I figured out I was doing awesome.  I had over 400 calories left for the day.  I wanted a little yogurt for my first snack.   I ate my leftover crock pot pork.  For an afternoon snack I stole a few of my coworkers almonds for a snack.  Oops and he saw me.  But we do that.  For supper I ate my wonderfully easy to cook cabbage casserole.  This casserole is a great fill me up dish with not many calories.  I wasn't sure how to measure the rice.  My mom put 1/2 cup of rice grains in the whole casserole.  So I put that I at least at 1/2 cup of cooked rice with my cabbage.  The whole meal was only 260 calorie and I filled up my cereal bowl.  This light calorie meal left me room for that ice cream I have been wanting all week. 
I finished with a total of 1277 calories for the day.   Had some ice cream and still had some calories left for the day.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Open Face Bacon Sandwich and Crock Pot Pork Pasta

My mother was nice to me this morning.  She had cooked some bacon for breakfast.  I decided to make a mini BLT.  Except my 1 tomato I had left was rotten.  Ugh...  But it was still delicious.  Again, I choose spinach over the iceberg lettuce  for the extra nutrients.  I had brought to work the leftover veggie pizza my mom and I had the other day.  Instead of doing a snack I choose to eat half of my lunch for a snack and the other half for lunch.  I got home early from work to run some errands.  I was able to get in my 20 minutes of cardio and the remainder of my hour doing weight training.  My mom had made another crock pot meal.  She had cooked pork steaks, a couple of cut up brats sausages with some onion soup mix  and water overnight.  This morning she finished it off by adding some wide egg noodles.  She had cut up some veggies and baked them in the oven.  The picture of my supper was what I ate, minus the cabbage.  It was kind of chewy and needed to cook a little longer.   I weighed the meat and portioned my veggies and pasta.  Don't do too much pasta.  I gave me 1/2 cup serving of pasta.  My meals were quite delicious and I was able to finished the day with a total of 1221 calories.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes!
