Crock Pot Chicken & Mushroom Gravy with Pudding Pie

When I was cleaning out the freezer this weekend I found a piece of sausage and garlic bread.  I decided that would be good for breakfast.  My mom didn't think so.  But oh well she didn't have to eat it. lol  During work I was inspecting some tank installations and I was feeling a little hungry and ate just half of my protein bar till I could figure out what I was eating the rest of the day.  I realized I forgot to bring my lunch.  But I had saved some of that delicious eggplant lasagna and ate a small serving of that.  I entered in all my meals in My Fitness Pal so far.  I had almost 600 calories left for the day.  I had a plan to eat a slice of that chocolate pudding pie my mom made Sunday.  We are having a busy week still helping out a friend.  My mom has chosen to cook crock pot dinners.  She had bought various meets on sale a while back.  She got a gallon Ziploc bag and premade some dinners and put in the freezer.  So all you have to do is take it out of the freezer and start cooking away!  Today's meal she cooked chicken with a homemade mushroom gravy.  It was hardly anything in it and it was just delish.  I had room for my pie.  How great that was.  I was able to save a few calories on the cool whip by doing the sugar free version.  There are some things I can do low fat and diet.  Only because you really can't tell the difference.  I finished with a total of 1297 calories for the day.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Plexus 96 Fruit Smoothie & Leftover's

My day started with my daughter making a fruit smoothie and not liking it.  So of course I doctored it up, added some protein powder to it and drank it most of the morning.  This day was a leftover kind of day.  I have some leftovers at work and home to eat.  But I am not sure what I will choose.  So I entered in my calories for the smoothie.  I didn't eat a snack because I sipped on the smoothie until 10,  I decided to eat the other stuffed bell pepper I had at work.  When I entered the calories for lunch I only had only a little over 300 calories left. I tried to do without a snack but that smoothie never filled me up that morning.  So I gave in and ate a slice of cheese.  I had a very busy afternoon and only made it in time to do a little weight training.   My less than 300 calories left dictated what I would choose for supper.  I had cleaned the freezer out this past weekend and I found what looked like leftover gumbo.  I ate a chicken thigh, I found some shrimp floating in it and got 4 of them, a little sausage, a little juice, 1/4 cup of rice and called it a day.  I did good with my calories for the day.  But that smoothie was not very filling.  I finished with a total of 1288 calories for the day.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Beef Roast Rice & Gravy with Baked Vegetables

Well Sunday was another busy day.   Saturday night I had put a roast in the crock pot for lunch.  I also had a head of cauliflower and squash in the fridge that needed to be eaten.   I had also decided for supper I would eat my leftover deer sloppy joes.  Then while looking in the fridge I noticed my daughter did not eat the sausage I BBQ the other day and thought that would be a good choice for breakfast.   I entered in my known breakfast, lunch and supper into the My Fitness Pal. I was looking pretty good with the calories.  I also had one slice of chocolate cake I had came home with from my meeting Thursday so I entered in that too.  At that time I had only 32 calories left in my day.  Crock pot meal was easy.  I just pour all of the ingredients in the pot and turned it on low all night.  I diced up the cauliflower, squash and some bell peppers.  I lightly coated them in my olive oil mixture and baked for 20 minutes and lightly sprinkled with pepper.  You can do salt too. But I kind of forgot. I was OK with that because the roast ingredients had a lot of salt already. I didn't even salt the rice when I cooked it.  I was gone for about 8 hours doing various things around Bunkie.  Between church and youth group I was a little hungry.  I snacked on 6 Dorito chips.  The Dorito chips put me over my calories by 32 calories for a total of 1362 calories for the day.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Southern Cornbread Supper

This was a very busy day.  I was out all day helping a friend and they helped me a little while.  It all started with a phone call at 8:00 am.  I had just had my coffee and they needed help.  I didn't really think of calorie counting at the time. But, I did make the decision to eat sort of light.  I had a piece of toast with one sausage link, wrapped it up together like a sandwich and ate it on the way.  For lunch we ate some leftover hamburgers they had made.  I kept it light and choose spinach over iceberg lettuce, and I did not get any of the French fries even though they were baked in the oven.  I knew my calories would be high with just the burger.  I could have made my burger less fattening by not adding the mayonnaise and the cheese.  But that is the grandness of this calorie dieting.  I like my burger with mayo and cheese, that is how I want to eat my burger and I did!  At a cost that is.  I only had 165 calories left for supper.   Here in the south when we want a hot quick meal we often choose to cook cornbread.  It may be a skilled fried version we call couche couche that you put in a bowl, add milk and eat it like cereal or you bake it.  We choose to bake ours in our little black skillet, as us southern Louisiana people like to do.  My mother wanted it like couche couche so she just crumbled hers with milk.  I wanted mine all slathered in butter.  So that is what we did.  The cost of not calorie counting earlier in the day and having that mayo and cheese for lunch, I only had calories for the cornbread and butter.  Nothing else.  I was fine with that.  I was tired from my long day and was not that hungry anyway.  I didn't eat much and still went over on the calories by only 5 for a daily total of 1335 calories for the day.  I didn't starve as the meat I ate for breakfast and lunch was very filling.   I do recommend that if you don't eat much at a meal that you should do protein over salads and stuff.  The meat holds you for longer.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Stuffed Sausage Bell Pepper & Vegetable Pizza

My menu started with leftovers.  I had this awesome plate saved of the flank steak and cushaw I had made.  I didn't want it to go to waste.  So I ate that meal for my breakfast.  It was a good choice because I was not hungry for a snack.  I had purchased two sausage stuffed bell peppers from Juneau's Cajun Meats in Marksville the other day.  I cooked them in my mini oven and put them in the fridge.  Yes I did not eat them that day.  The reason is to save me some fat calories.  See when the stuffed bell peppers cooled the fat floated to the top and I was able to skim it off before I reheated it for my lunch.  It was soooooo good.  I ate one whole stuffed bell pepper.  That meal held me up too and I was not hungry for a snack in the evening either.  I did my 1 hour of exercise, which included 20 minutes of cardio and the rest of the time weight training.  Then for supper my mother had plans for personal pizza's, make yours your way.  Well I went to My Fitness Pal to see how many calories I could have for the evening.  There was only 316 calories left for the day.  I entered in all my ingredients to calculate my pizza.  The crust alone was 200 calories.  The only thing that did not make the pizza was the pepperoni and I put a little less cheese than I wanted.  I ended up with a vegetable pizza.  But, I'm fine with that.  It really turned out to be a very delicious pizza.  I am glad I didn't put a lot of cheese, it was just perfect.  I ended my day with a total of 1366 calories.  Amazingly I was only over by 36 calories.  To me that was awesome under the circumstances of eating leftovers and not knowing what I was eating for supper and making it happen.  And yes! Profile of me in January vs Today

I took a picture of me in January because I was quite disgusted at how the weight was not coming off.  I thought if I took a picture of myself then and do another one now I would see some kind of change.  WOW I sure do see a big change.  What hit me the most was not that my legs, arms, belly, neck and face looked smaller.  The first thing I noticed was how much better my skin complexion looks.  So maybe you need to do a diet profile photo to help you see your changes too!

Chocolate Cake

This day I knew I was going to be eating heavy so for breakfast I had 1 scrambled egg.  I had a regional staff meeting in Monroe and had no idea what the menu was for lunch.  I had made a homemade chocolate cake from scratch to bring for the meeting.  It was something I have been wanting and figured if I shared I wouldn't be tempted to have to eat it all.  Because as you all know so far I hate for food to go to waste.   I entered in all my ingredients and determined if large slices were served that it would be cut into 12 pieces.  One slice of this 12 piece cake was 480 calories!  When lunch time came we had BBQ West delivered.  It was BBQ chicken, brisket, coleslaw, baked beans, potato salad and Texas garlic toast.  I didn't take a picture of my meal because my bosses were there and I didn't want them to see. lol  Also,  I was not able to determine ahead of time what I was going to eat and how much of it.  So this is an instance of how you can either under estimate or over estimate  your meal.  I choose one chicken thigh.  One small serving of brisket.  I had a Styrofoam plate that had the 3 divider in it.  I put like 1 level tablespoon of baked beans and potato salad into one section of the divider.  Then I finished it off with 1 garlic toast bread in the other divider and one serving of my chocolate cake.  I had estimated my lunch menu to be about 800-900 calories with the desert.  Well when it was all said and done I had 1,100 calories for lunch.  I probably would have been OK if I wouldn't have had the bread and chocolate cake.  I knew I shouldn't have it but I under estimated my calories for the main meal.  For supper I had half of a baked potato and had some southern white sausage gravy on top.   My friends and I had an emergency and didn't get to exercise.   But we did get 3 hours of working exercise later in the evening.  I really enjoyed being able to share my homemade chocolate cake and not have any leftovers to be tempted with later.  With under estimating my lunch menu I went over my calories by 280 calories for a total of 1615 calories for the day.  On a positive note I put only one hour my working exercise in my food diary and the results said I should have been OK with my overage.  For my weight loss I would still like to keep my calories at the 1330 total with or without exercise.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Southern Boudin and Deer Meat Sloppy Joe's

I spent time Tuesday evening trying to figure out what I was going to eat.  With a busy work week I have left my mother up to the cooking.  I also had seen that there was one more donut left that needed to be eaten.   I knew I wanted either a hamburger or a link of boudin.  I entered in My Fitness Pal all my meals.  I was almost 300 calories over my budget with no snacks on the burger and I was under on the boudin.  I decided to keep my menu as is with the exception that if I did eat that burger I would place half my plate in a to go box, which would put me under by 100 calories.  I wasn't sure how to enter in the burger and fries in the app.  I picked items that were verified and had similar calories among that group.   At lunch time I was very hungry and the thought of only eating half my burger and fries did not appeal to me.  SO, I stopped at Juneau's Cajun Meats and got me a link of boudin.   They weigh your boudin which makes it easier for calculating my calories.  I did my 1 hour of exercise, which included 20 minutes of cardio and the rest of the time weight training.  For supper I had the sloppy joes my mom made.  I put the sandwich in half, open faced style and placed some meat on each bun.  This gave my mind the appearance that I was eating more than I was.  I was able to add more filling to my meal because she used ground deer meat instead of ground meat.  I say I had a great southern lunch and my deer sloppy joes were just delish also for a total of 1169 calories for the day.  And yes! Beef Potato Carrot Rice & Gravy

When I went to bed last night I realized that my daughter had some left over donut twists from Sunday.  As you have heard me say before I hate to waste leftovers.  With that said, I ate one for breakfast with my coffee.  At work we had done a few business assessments.  I brought me a protein bar for a snack.  I was only a little hungry so I ate half.  We made it back to the office in time to eat one of my leftover lasagna's instead of eating out.  My left over meals were just delish.  Once home I did my 45 minutes of cardio.  For supper my mom made homemade chopped steak, potato, carrot rice and gravy.  I had a great day for meals for a total of 1098 calories for the day.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Busy Work Week Chicken Fajita's

This is going to be a really long work week.  Meals are going to be tough to maintain.  But I will try my best to get it within my limits.  See I work for LDEQ in Louisiana and we just had a record flood from Avoyelles, St. Landry area all the way to Lafayette and Baton Rouge parishes.  We had to wait for the governor to say that the search and rescue phase was over for us to begin our oversight and disaster help for businesses to recover.  We had our assignments given to us over the weekend.  My assignment was a landfill inspection and the rest of the week I will be doing facility assessments.  That means I will be working out of the office all week.  Breakfast I ate a piece of leftover BBQ chicken from Sunday.  I like to eat meat for breakfast as it keeps me fuller longer.  Which worked out well and I was not hungry till lunch.  I packed me a ham and cheese sandwich with 1/2 a cup of grapes.  I did my 1 hour of exercise, which included 20 minutes of cardio and the rest of the time weight training.  For supper was my treat.  I had sautéed onions, bell peppers and mushrooms in a little butter.  I used carb balance tortilla wraps, cheese, light sour cream and pieces of rotisserie chicken from Sam's. I put so much onions and chicken that you can not tell that the wraps and sour cream are low calorie.  As  you see I ate some great meals for the day.  I ate 1349 calories for the day.   That put me only 19 calories over my goal.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Lyla's 13th Birthday BBQ Chicken & Sausage Cheat Day

Today is my daughters 13th birthday.  So I went all out on my cheat day.  For breakfast I had some banana bread with my coffee.  Then for lunch I made a grand meal of BBQ chicken and sausage, with garlic bread.  I also made a caprese salad.   The caprese salad was a combination of eggplant, tomato, fresh motzerella cheese, basil with a non dairy homemade pesto.  The oil mixture I used was a marinated homemade concoction of olive oil, garlic, and rosemary.  I use this quite often in my recipes to lightly oil my pan.  You ought to try it.

For the main dish I had BBQ leg quarters, some Savois sausage and garlic bread.  The chicken got a light coating of Pig Stand BBQ sauce.  I am sure on the My Fitness Pal I over estimated that.  Here in the south we love our BBQ.  My BBQ is to die for.  I would recommend that BBQ be placed on that cheat day if you will be doing the garlic bread, sausage, rice dressing and potato salad, which are the usual staples at this sort of meal.  But as  you see in the picture down below of my lunch plate I did not over do my portions.  For my desert we had a chocolate chip cookie, Klondie bar and washed it all down with one glass of coffee. I was a little hungry for supper and I ate 1 leftover chicken leg.
 
As you see for my cheat day I ate what I wanted but did not go over board on my servings.  I saved a few calories by eating very light for supper.  I had a great cheat day meals for a total of 1768 calories for the day.  That is 438 calories over my budget.   Remember this cheat meal could have been a lot worse if I would have went back for seconds or even eaten heavier for breakfast and supper.   So enjoy your cheat day and don't over do it too bad.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Grilled Flank Steak & Creole Cushaw

I am a firm believer in leftovers.  So I prepared my meal plan to have my other half of my potato from yesterday and the leftover fried pickles.  I then added in my ingredients for my supper menu of grilled flank steak and creole cushaw.  Oh I also added my coffee.  I can't do without my coffee.  To figure out my servings for the creole cushaw (green winter squash), I entered all the ingredients in My Fitness Pal as the recipe stated.  Then I figured out how may servings I would like to get out of it.  In my case 3 pounds of cushaw (12 cups) will make a 14" black skillet full of creole cushaw.
I would make a minimum of 6 servings out of it.  I could do smaller ones and make it 8, but I'm not.  Then I divided each ingredient by 6 that's how I figured it out.  Ok so with my coffee, leftover lunch and my supper I have 42 calories left.  What? Ok I haven't entered my snack or breakfast.  Ok, I reworked my menu like this.  I put my potato for breakfast, kept my pickles for lunch and added 1/2 banana for a snack.  That will work.  Even though I didn't get much to eat for my morning and mid day meals, my supper was worth every calorie.  In the evening I went do my 1 hour of exercise since I missed Friday, which included 20 minutes of cardio and the rest of the time weight training. Southern Fried Catfish and Fried Pickles

When I made my meal plan for the week I forgot that it was payday.  That means we go out to eat something special.  This type of eating out can go 2 ways.  1. eat what you want most of the day without going to crazy, as a cheat day or 2.  do some serious work on your meal plan to get it right.  I choose option 2 because I think Saturday or Sunday might be my cheat day.  In the My Fitness Pal I entered in what I normally order to eat from the Katfish Kitchen restaurant in Eola, Louisiana.  Which is a 3 piece catfish with either a baked potato or French fries and fried pickles for an appetizer.  I checked the calories for the fries and potato.  The potato won to reduce the fat intake.   My portion size will be only 1/2 of the potato.   Now to work hard on what to eat for breakfast and lunch.  I only have 501 calories for breakfast, lunch and snacks.  I picked oatmeal for breakfast.  I usually do 2 servings but will have to settle for 1.  I will graze on apples at both of my snack times.  Then I only had 200 calories approximately left for lunch.  I picked a protein meal bar.  Well things changed again. I purchased a Sam's Club
rotisserie chicken for my mom at 7am.  Well that was pure torture, it was hot, smelled amazing and was staring me in the face.  So I opted to eat a chicken leg and a little of the thigh for 3oz of chicken.  I weighed the chicken without the skin and bone.  Then I moved my oatmeal breakfast to lunch and decided not to eat the protein bar.  See I was only eating the protein bar because I needed more protein in my diet for the day.  Well I got my protein eating the chicken for breakfast.  I wasn't really hungry for a snack, but this one chocolate chip cookie I haven't eaten yet said "Eat me before I go bad." I gave in and skipped the apple grazing.  That chicken and oatmeal did a good job at satisfying my hunger.  I didn't have an afternoon snack either.  We went eat at 5:30, better to eat that fattening meal early.  I ate exactly what I budgeted and took the leftovers home.  Another day of great meals for a total of 1361 calories for the day.  Not bad for a meal eating out, only 31 calories over my budget.  I know, I know,  I could have been under 17 calories if I would have eaten the apple instead.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! BLT Sandwich

Today I designed my meal quite differently.  There were many twists and turns in this menu to make sure I stayed within the 1,330 calorie regimen.  I did not have anything for leftovers for lunch so I fixed me a serving of last night's eggplant lasagna.  For supper the menu is BLT sandwiches.  The lasagna and the bacon have a lot of everything (salt, fat and sugar).  I opted for just scrambled eggs for breakfast.  That was to make sure I would not be hungry for a snack before lunch.  Amazingly I was not.  I had budgeted Cutie oranges for my afternoon snack.  When I ate my lasagna for lunch I was only hungry for half of my plate.  I recalculated my calories and saw that I had a lot of leeway for just about anything.  So I took the Cutie's off my menu and ate one chocolate chip cookie with my lunch.  I had at that point I still had extra calories.  Right before I got off of work I was feeling a little hungry so I grabbed a Dannon Light & Fit drink to have while driving home.  Once home I did my 45 minutes of cardio. Supper was my delicious BLT sandwich.  Now you can make a difference on how you  cook your bacon to save a few calories.  Cook the bacon on a large cooling rack or 2 small ones as I have done and place on top of a cookie sheet lined with foil for easy cleaning.  Bake in the oven at 350 for thin bacon and 400 for thick bacon, cook till desired crispiness.  The drippings will fall off the bacon and the bacon will stay relatively straight.  Once done collect the bacon drippings to use as seasoning for later cooking's.  I don't use my bacon drippings that often so I store mine in the fridge.  Other Louisiana folks might opt to leave it next to the stove.



I had calculated 3 1/2 pieces of bacon, a generous helping of lettuce, a tablespoon of mayo and a quarter of a tomato. Don't forget to calculate any added seasonings.  In my case I added salt and pepper to my tomatoes.  I still had 300 calories left for the evening so I ate my last 1/2 cup of pudding and called it a night.  Another day of great meals for a total of 1153 calories for the day.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Eggplant Lasagna

For this menu I knew what I wanted to each for my meals.  I entered my menu in the My Fitness Pal app to make sure I was doing good with my menu choices.  At this point it was looking good.   I then determined my portion sizes to make it right.  I ate leftover banana bread for breakfast.  Then when I felt hungry I put in all my available snacks into my calculations.  My snack ideas were a Go Big - Strawberry yogurt, Light 'n Fit Nonfat Strawberry Banana and Light & Fit - Nonfat Yogurt Drink - Mixed Berry.   Since I had enough calories available I ate one of my new yogurt's I wanted to try that best fit my fat, salt and sugar levels.  Leftover fried sausage cabbage for lunch.  I was feeling hungry around 3:30 in the evening.  I fixed me 1/2 cup of grapes to graze on the way home since my salt and fat was looking high.  In the evening I went do my 1 hour of exercise, which included 20 minutes of cardio and the rest of the time weight training.  Then the reward was this awesomely delicious eggplant lasagna.  I basically measured all the ingredients that went into this the one lasagna.  Then I calculated how many servings I would get out of it.  Then I divided the measurements accordingly to put in the My Fitness Pal program.  As  you see I ate pretty good for the day and I only ate 1164 calories for the day.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Banana Nut Bread and Homemade Pizza

Tuesday I was hungry for some good ole southern banana nut bread.  Perfect time to have it is at breakfast.  I cut 2 slices and weighed on the scale.  Went to My Fitness Pal to enter in breakfast.  I have leftovers for lunch and I also knew that I wanted homemade pizza for supper.  I had extra calories to play with depending on how much pizza I ate for supper.  So I cut me another slice of bread.  I did not change the way I ate my bread. Remember I am not per say dieting.  I am mostly watching my calorie intake.  So I took my skillet out, buttered my bread, grilled it and ate with my wonderful cup of coffee.  I went to work at the LDEQ office.  We just had that record flooding here and I have been busy checking on businesses.  I left the office without my snack.  I wasn't hungry so I didn't stop to get anything.  But by 11:00 I was hungry and ate my leftover pasta and spaghetti sauce from the other night.  For my snack I had planned on grazing on 1 cup of grapes.  But Isaac my coworker gave me 1/2 cup of butternut squash to eat that he had made.  So no grapes for me.   I got home and did my 45 minutes of cardio.  For supper I measured everything for a whole 12" pizza.  What crust you choose to put  your pizza toppings on makes a difference.  If I were to use the premade personal pizza crust I would only be able to eat half because of all the bread.  I used the 12" ultra thin pizza crust found at the Dollar Tree.  Then take a look below at my numbers.  If you were to order a 12" deep dish supreme pizza from Pizza Hut it would be 3280 calories,184g of fat and 7280 mg of salt for a whole pizza.    Last week I went to a meeting and they served us pizza.  I took at snap shot of that meal.  I had only 1 1/2 slices of pepperoni pizza and I had 555 calories, 29g of fat and 1275mg of salt.  The same pizza with the same type toppings that I have made at  home had a lot less calories, fat and salt.  Last night I had the calories and I was pretty hungry for my homemade pizza so I ate half of the 12" pizza as seen in the photo, which had more toppings than crust.     I had 507 calories, 24g of fat and 1190 mg of salt.  I say I did pretty good.   Later in the evening I checked to make sure I had entered all of my food in my diary and that the portions were correct.  I still had an extra calories left for the day.  So I treated myself to 2 mini Reece's Peanut Butter cups.  I ate pretty good again for the day for a total of 1110 calories for the day.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! I measured and weighed everything.  A crucial part of everyone's dieting is will power. The second part is portion control with good choices and third is physical activity.
