Cooking Healthy On a Weekday
A longtime friend is working on getting healthy both physically and through diet.  She has run into a situation that I had in the past.  “Time is not my friend!” yep all my friends know this is my favorite saying, but it’s true.  This post from my friend is what I hear most often when people are trying to eat healthy.  Eating healthy is the quickest and easiest way to cook by far.


So yes it’s true, work, exercise, go home to cook, do homework with the kiddos, get ready for bed and then prepare for the next day gets overwhelming.  Adding those extra 45 minutes of exercise in your day is taking up the time for you to get your chores done and leaving you exhausted.  Well to get this under control you will have to get a few gadgets, a few Tupperware containers, get tools to make cleanup quicker, make a menu plan, go shopping, implement how you’re going to execute that menu plan and prepare ahead of time.
I recommend that you invest in a few gadgets and items.  These can be really cheap to real expensive.  It all depends on your taste preferences. I will start with the basic most important ones first.  Basic is a GOOD nonstick skillet, some pots for cooking sides and soups, a LARGE black skillet, sheet pan, aluminum foil, crock-pot liners, 1 cup Tupperware containers, small 3 compartment Tupperware containers, casserole pan and throw away aluminum casserole pans with aluminum lids. This is a good start.  The next thing on your list of gadgets to have is a crock pot.  Those are relatively cheap.  Unless you would like to spend a little more money invest in an electric pressure cooker.  The pressure cooker I recommend is the “Power Cooker” the largest one. I like this brand because you can use like a crock pot, cook rice, steam veggies, brown meat and veggies and pressure cook meals.  The last gadget to purchase is a gas grill.  My suggestion is the Sam’s Club “Members Mark Portable Stainless Steel Gas Grill”  http://www.samsclub.com/sams/portable-stainless-steel-gas-grill-with-cover/prod2500002.ip?xid=plp:product:1:4  

For menu planning depends on the gadget you want to use and the time you have for the week to execute that meal.  If I had to pick a gadget it would be all the stove top options I mentioned above and the pressure cooker.  The grill is sort of a luxury.  I would first start with the crock-pot/pressure cooker.  Go to Pinterest or Google crock pot freezer meals.  Find a minimum of 12 of the better low calorie all-inclusive menus, 6 of one meat and 6 of another type of meat.  Try and use frozen or fresh vegetables instead of canned ones.  If it calls for soups like cream of mushroom, cream of chicken etc.., get the Campbell’s Healthy brand.  All the canned foods have lots and lots of salt that make you retain water and raise blood pressure.  Go to the store buy your meat in bulk.  Get 90/10 ground meat, chicken (any variety you may like), pork etc… and get you a box of crock pot liners.   Get minute rice and mashed potato flakes if you need those sides.  Ok here is where the fun begins.  Take a crock-pot liner and place all the ingredients of one recipe in the bag.  Label the bag with instructions to cook and name.  Place them in the freezer.  When you find a day you know that no one has time to cook. You simply go in the freezer take out a crock pot meal to defrost.  Then in the morning place your meal in the crock-pot before leaving for work.  When you get home it should be ready to eat.  If your meal requires rice or potatoes only eat 1/3 cup portion, no more than that.  If you’re using the pressure cooker you can make soups in 15 minutes, cook meats in 30 minutes and any meal you may make in the pressure cooker should take no more than 1 hour to cook.  The great thing is that it requires your attention for no longer than 10 minutes to prepare.  Then set it and forget it till it’s done.  For the veggies you can cut up ahead or purchase already diced up in fresh or frozen sections of the store.
 
Next plan of action, if you don’t mind leftovers, you can have what we call in our home “Smorgasbord Sunday”.  Make 3 main meals, 6 or more sides and a pot of soup.  Portion the soup in the 1 cup Tupperware containers.  Use the small 3 compartment portion Tupperware containers to make like little TV dinners that you would just microwave.  Pick a day you have the time to execute this plan.  You can really eat anything you like but you need to learn how many calories are in that recipe.  I suggest using the MyFitnessPal recipe app to help determine how to package those meal plans.  You want to package the 3 compartment Tupperware meal to be less than 400 calories. Portion with one meat with 2 healthy sides, or one meat, one healthy side with 1/3 cup of rice or potatoes.  Then you just pick a container and microwave.  Everyone in the house can use a microwave.
The black and nonstick skillets are great for cooking extra quick meals.  Which include Sam’s Rotisserie chicken, boneless skinless chicken meat, pork chops, ground meat, steaks, shrimp and fish.  All of these should take no more than 30 minutes to cook.  The quickest options are shrimp and fish.  Those can be cooked in less than 10 minutes.  Steaks can be cooked for as little as 12 minutes.  Pork chops, ground meat and chicken cook for the longest.  
Casserole dishes can be prepared ahead of time.  You can prepare either the day before, the morning of or plan it like you did the frozen crock pot meals.  Get a minimum of 12 healthy casserole recipes.  Sam’s rotisserie chicken goes into a lot of these meals.  Make these in advance; write on the lid the recipe name and how to cook it.  Right out the freezer you can simply place in the oven when you get home.  Get some chores done and violas’ your meal is cooked.  You can also portion leftovers in the 1 cup portion Tupperware containers for future meals.  One cup is about the portion size for a casserole, because it usually has pasta, rice, cheese, etc..  in it.  No clean up needed if you use the foil pans instead of a casserole dish.
Sheet pan line it with foil and bake all of your cooking items.  Make your menu that whole or half the meal will be cooked in the oven.  When you’re done just throw away the foil and you’re done.
Last tool, I use, is the gas grill.  I like to eat grilled foods.  I like to cook boneless skinless chicken meat, pork chops, hamburger, steaks, shrimp, fish and vegetables.  These can be cooked in usually 15 minutes or less.  
I know this is a lot of information to take in.  But once you master these plans it will be easier.  I will be elaborating in the future on each of these methods.

Chicken Vegetable Soup

 Well my day started with some leftover breakfast from Saturday.  I had a sausage patty, eggs with one slice of toast.  Logging my meal on Saturday I didn't realize that just the sausage alone was 200 calories.  Dang that is a lot.  But too late I already ate it at before I entered into my food diary.  I was careful the rest of the day.  I was not hungry for a snack.  Around 11:00 I was a little hungry.  Option was to eat a snack or go ahead and eat lunch.  I picked lunch.  I ate a bowl of my low calorie white bean soup.  Since I ate early I was hungry for a snack.  I finished up the leftover cool whip cake since I had a few extra calories to allow for it.  I got home to do my 20 minutes of cardio and weight training.  When I got home my mother had made crock pot chicken vegetable soup.  I so forgot to take a picture of my meals.  But I think the vegetable chicken soup was just as good at beef vegetable.  I had some calories left, oh heck I had 379 calories left.  So I had what was left of the cornbread the other day with some butter.  I finished the day with a total of 1104 calories for the day.  I was still under my calories by 226.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Crock Pot Chicken Rice & Gravy

My day started off great, I knew what was for breakfast and lunch.  I entered those meals in the My Fitness Pal.  I had plenty of calories left for the day.  For breakfast I tried this oatmeal with flax seed.  I have to say it held me pretty well.  I was not hungry for a morning snack.  If you are like me and really don't like oatmeal use milk instead of the water to make it.  It tastes sooo much better.  I had my leftover fish for lunch.  I was not sure what was for supper.  I did my 45 minutes of cardio when I got home from work.  My mom had made a crock pot chicken gravy, rice and some steamed broccoli and cauliflower.  I can say it was amazing.  She said it only consisted of chicken, mushrooms, bell peppers and onions.  Amazingly I still had almost 200 calories to spare.  So I treated myself to leftover cake for desert.   Only 1/2 a serving of cake.  I finished the day with a total of 1338 calories for the day.   That is over by 8 calories.    I have to say that is pretty darn good.  I got comfort food of rice and gravy and desert!  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Crock Pot Pork Spare Ribs

This day was the last of my very busy week.  Busy it was.  Thank goodness we had lots of crock pot meals to eat.  This Saturday was no different.  I was going shopping with a friend and we were supposed to leave at 9am and return by 2:30 am.  I started my day with eating 2 eggs over easy with toast.  Oh how I love to eat that.  I entered it into My Fitness Pal.  The rest of the day I had to guestimate since I can't search items on my phone.  This is how the 1,330 calorie diet can go seriously wrong.  Especially if you don't plan like me to have some healthy meal alternatives and healthy snacks to have on hand.  I put my crock pot pork spare ribs on to cook.   I just put a lot of seasoning and spices together and made like a rub on it.  I couldn't find any ground mustard in my cabinet.  I used regular mustard instead, that's the yellow stuff you see on top.  I left and went to her house by 9am.  By the time we got things together to go out of town shopping it was 11:30.  There was talks of shopping first and then getting a bite to eat.  I seriously needed a snack to hold me over.  So I grabbed 6 club crackers and headed out the door.  We went shopping.  We had lunch around 2pm.  Yea I would have died if I didn't have a snack.  We ate at Sam's Club deli.  Choices, to many unhealthy choices.  I decided to just pick something I was hungry for.  The winner was a 3 meat pizza.  It was hot and fresh.  We made it back home around 5pm.  I had a few errands to do before I could finish my day.  I left her house and started my errands. I had some cleaning to do, grass to cut and groceries to unload before I could eat supper.  At my cleaning chore I dug around for something healthy to eat.  All I could find was a huge variety bag of chips.  Yea I got one.  I finished my work, cut some grass.  The sun was still shining and I cut some more grass.  Then I seen more grass to cut and kept going till I had most of it done.  I still have some to do as I have almost 3 acres to cut.  It was dark by this time.  I sat down to eat my crock pot ribs at 8:30 pm.  I was to tired to fix any sides with it.   I just placed me a large helping on the plate and measured 1 cup of milk to drink with it.  I weighed the whole plate with the ribs on it.  After I ate, I weighed the plate with the bones.  I subtracted the weight and I had eaten 9oz of meat.  Oh my!  No turning back now.  The food is already being processed in my belly.  I pondered if I should even waste my time to see how many calories I had consumed.  But, yes I do.  That way tomorrow I can adjust and maybe counter act the damage from today.  I entered my snack, then the pizza and finished with the pork and milk.  OH MY!   I went over my calories by 590 calories for a total of 1920 calories for the day.  I so did not want this to be my cheat day.  I have me and my mom's birthday coming up on Monday and I wanted that to be my cheat day.  Ugh......... I had a lot of exercise that probably made it ok.  There is no real way to estimate the calories I did burn from shopping, cleaning and cutting grass.   I never enter those estimated calculations in the My Fitness Pal program.   For my weight loss I like to keep my calories at the 1330 total with or without exercise anyway.   I've got some serious dieting choices to do the next couple of days to fix this awful meal of a day.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Cabbage Casserole

For breakfast I finished off my leftover banana bread.  Oh it was soo yummy, just as good as the first day.  I knew I would eat leftovers for lunch and I knew what my menu was for supper.   I entered all my items in the My Fitness Pal to see where I was at in the calories.  I figured out I was doing awesome.  I had over 400 calories left for the day.  I wanted a little yogurt for my first snack.   I ate my leftover crock pot pork.  For an afternoon snack I stole a few of my coworkers almonds for a snack.  Oops and he saw me.  But we do that.  For supper I ate my wonderfully easy to cook cabbage casserole.  This casserole is a great fill me up dish with not many calories.  I wasn't sure how to measure the rice.  My mom put 1/2 cup of rice grains in the whole casserole.  So I put that I at least at 1/2 cup of cooked rice with my cabbage.  The whole meal was only 260 calorie and I filled up my cereal bowl.  This light calorie meal left me room for that ice cream I have been wanting all week. 
I finished with a total of 1277 calories for the day.   Had some ice cream and still had some calories left for the day.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! A Leftover Kind of Day

We are still having a busy kind of week.  That's deems this day as a leftover kind of day.  The only way to do the calorie crunch is to choose which leftovers to eat.  For breakfast I ate one of those new Jimmy Dean stuffed hash browns.  I am glad I only bought one box.  It wasn't all I thought it would be.  But on another note it was filling.  I brought me a few crackers to snack on while working out in the field. Then for lunch I had some of Tuesday's leftover crockpot mushroom chicken.  My mom portioned the plate.  It was way too much food. I took a little of the chicken, 1/2 cup of rice and the 1/2 cup of green beans.  I entered in my calories and I still had over 600 calories left for the day.  I picked the yogurt drink as a snack.  I entered in all my ingredients in the My Fitness Pal to see how many calories I had left.  I went and did my 45 minutes of cardio after finishing an event with a friend.  When it came time for supper I picked the food that I would get the most fulfillment, the leftover crockpot pork pasta won!  I had over 100 calories left for the day.  I couldn't decide if I wanted a cup of ice cream or some candy.  Well according the My Fitness Pal the Ice cream was over 200 calories and the 2 mini Reece's was only 88.  I choose wisely and ate the mini Reece's.  I finished with a total of 1280 calories for the day.   If I would have chosen the ice cream I would have gone over my calories.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Open Face Bacon Sandwich and Crock Pot Pork Pasta

My mother was nice to me this morning.  She had cooked some bacon for breakfast.  I decided to make a mini BLT.  Except my 1 tomato I had left was rotten.  Ugh...  But it was still delicious.  Again, I choose spinach over the iceberg lettuce  for the extra nutrients.  I had brought to work the leftover veggie pizza my mom and I had the other day.  Instead of doing a snack I choose to eat half of my lunch for a snack and the other half for lunch.  I got home early from work to run some errands.  I was able to get in my 20 minutes of cardio and the remainder of my hour doing weight training.  My mom had made another crock pot meal.  She had cooked pork steaks, a couple of cut up brats sausages with some onion soup mix  and water overnight.  This morning she finished it off by adding some wide egg noodles.  She had cut up some veggies and baked them in the oven.  The picture of my supper was what I ate, minus the cabbage.  It was kind of chewy and needed to cook a little longer.   I weighed the meat and portioned my veggies and pasta.  Don't do too much pasta.  I gave me 1/2 cup serving of pasta.  My meals were quite delicious and I was able to finished the day with a total of 1221 calories.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Crock Pot Chicken & Mushroom Gravy with Pudding Pie

When I was cleaning out the freezer this weekend I found a piece of sausage and garlic bread.  I decided that would be good for breakfast.  My mom didn't think so.  But oh well she didn't have to eat it. lol  During work I was inspecting some tank installations and I was feeling a little hungry and ate just half of my protein bar till I could figure out what I was eating the rest of the day.  I realized I forgot to bring my lunch.  But I had saved some of that delicious eggplant lasagna and ate a small serving of that.  I entered in all my meals in My Fitness Pal so far.  I had almost 600 calories left for the day.  I had a plan to eat a slice of that chocolate pudding pie my mom made Sunday.  We are having a busy week still helping out a friend.  My mom has chosen to cook crock pot dinners.  She had bought various meets on sale a while back.  She got a gallon Ziploc bag and premade some dinners and put in the freezer.  So all you have to do is take it out of the freezer and start cooking away!  Today's meal she cooked chicken with a homemade mushroom gravy.  It was hardly anything in it and it was just delish.  I had room for my pie.  How great that was.  I was able to save a few calories on the cool whip by doing the sugar free version.  There are some things I can do low fat and diet.  Only because you really can't tell the difference.  I finished with a total of 1297 calories for the day.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes!
