Monday Leftovers

Monday September 12, 2016 Menu



If you haven't noticed just about every Monday is a left over kind of day.  So basically I sat at my computer that morning and figured out what leftovers I had and put those calculations in the My Fitness Pal.  I ended up settling on finishing up my daughters pizza for breakfast.  Then for lunch, crawfish ettoufee and fish.  I had a bunch of extra calories and after lunch I just wanted something sweet so for a snack.   I had a mini serving of a rice crispy treat.  For supper I had a big bowl of baby Lima bean soup, with a slice of cornbread.  I finished the day with a total of 1298 calories for the day.  Wow, I was 32 under my calorie goal.    Another great day!  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Baby Lima Bean Soup

For breakfast I had an egg over easy with one of my moms whole grain slices of bread.  That was one big slice of bread.   Amazingly it was only 20 calories more than a white slice of bread.  Wasn't dry and quite tasty.  It was pretty filling and I did not have to eat a snack.  For lunch a friend gave us a plate lunch from the local fair.  It was roast beef, rice dressing, yams and coleslaw.  I forgot to take a picture.  But the helping was so large I only ate half of my plate.  Even though I ate half it weighed in at 651calories.  Sure was glad I didn't eat the whole plate.  I have enough for a leftover meal this week. If it's still there I will take a picture of the remaining portion, which is still a lot of food.  My mom wanted to have an afternoon snack.  She has been dying for us to try this chocolate coffee energy drink.  We did the recipe counter and a whole drink was almost 300 calories.  Yea that would almost be a meal replacement drink.  We each got 1 little juice glass to taste.  It was quite good, with coffee, peanut butter and cocoa powder.   Luckily we planned a somewhat light supper.   We had soaked some baby Lima beans for a simple soup.  OMG a whole bowl was only 78 calories!  My mother cooked a cornbread to go with it.  Of course I couldn't resist.  I allowed myself at least 1 slice.  Remember if you use canned beans you will not have the same low calorie results.  I finished the day with a total of 1395 calories for the day.   That is only 65 calories over my goal.   I think it went pretty well, considering.  I am thinking of making some more extra low calorie soups to make in advance and freeze for some more extra low calorie meals, without the cornbread of course.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Shrimp Gumbo & Pan Grilled Catfish

I wanted to finish cutting grass so I fixed me a egg and smoked sausage breakfast.  I worked out side all the way to lunch.  For lunch I had some catfish we didn't finish cooking,  I pan grilled it and topped it with some of the leftover crawfish etouffee.  Ohhh yummy.  Just the fish is only 216 calories for a large catfish fillet.  Add some of my oven roasted veggies at 1/2 cup for only 50 calories and you have yourself a very low calorie meal.  But I had some awesome crawfish etoufee instead.  lol   I had an afternoon coffee.  My meals went pretty well today.  My sister called and they had made an awesome shrimp gumbo.  I ate about 2 cups of gumbo and only put 1/3 cup of rice.  Remember keep it light.  You don't need shrimp rice and gravy from eating to much rice.  That gumbo was way under 300 calories.  The southern seafood gumbo's are lower in calories compared to traditional chicken and sausage.  The chicken we cook with the skin on and the sausage has some calories.  When making a chicken and sausage gumbo we usually skim the grease off the top before plating up our food.  With a seafood gumbo there is really no need to do that.   When my day ended I finally got to tally up my calories in the My Fitness Pal diary.  I had a whole lot of calories left.  I treated myself to some ice cream and chocolate syrup.  What an end to the day.  I finished the day with a total of 1125 calories for the day.   That is 205 under my calorie goal.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Turkey Patty with Sautéed Onions and Mushrooms

Well just to let you know,  I succeeded in getting rid of that leftover birthday cake!  Yay.......  Get rid of the temptations that will hinder your dieting.  Don't buy it, don't bake it, don't bring it home, because if your like me you can not sustain from it.  Ok, my day began with my mom cooking me supper for breakfast.  Yep that is what she did.  I got a pan grilled turkey patty with sautéed onion and mushrooms.  Wow!  I did the calculations on that in the My Fitness Pal and those calories were no different than any other breakfast food.  The turkey patty alone was only 250 calories.  I was no way hungry by lunch time.  Actually I didn't eat till 1pm.  So if your going to have a busy day this would be a good option to hold you till your next meal.  This would be a great low calorie option for any meal too.  It only weighed in at 285 calories, it was delicious and filling.  Shoot if I get desperate to loose a few pound quickly I might eat this more often, with a 1/2 cup helping of my baked vegetables that weigh in at 50 calories.  For lunch I ate another slice of my daughters leftover pizza.  It was not very filling and I had to eat a snack.  I choose to finish off my toast chee crackers from the other day.  I went to my friends house that evening for a visit and supper.  I didn't really have much healthy foods to choose from.  I had a choice of either cheese pizza or pepperoni pizza.  Nope, I just had that for lunch.  The other option was a homemade shredded beef sandwich. She had a side of chips or a homemade noodle salad.  I had the sandwich, skipped the chips and had a 1/2 cup helping of her noodle salad, since she made it.  Now looking at my calories I should have just had the sandwich.  OMG the pasta salad was very high in calories at 300.  Between the sandwich and the noodle salad the estimated mayo was 180 calories just by itself.   My friends had my leftover birthday cake and I skipped dessert.  I finished the day with a total of 1663 calories for the day.   That is 333 calories over my goal.   As you see it is hard to calculate your meals when your not in charge of the menu.  So I suggest if you know your going eat out to do like I did and keep the other meals as low in calories that you an tolerate.  Don't starve yourself, because it can have the opposite effect,.  Your body will try and store food.   Like after lunch I was hungry, I could have saved me 110 calories and not eaten the toast chee crackers.  I would have starved because I didn't eat supper till 6:30 pm.  Just eat light snacks or graze on a snack.   I need to go shopping for some grapes again.  I usually measure out 1/2 cup of grapes and pop one in my mouth probably every half an hour till gone.  That usually does very well in keeping my afternoon hunger at bay.  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Baked Zucchini Squash and Bell Peppers

This day was nothing really special.  I knew that most of my meals would be leftovers.  I wanted to eat a large serving of the crock pot pork ribs.  I entered the ribs, the leftover pizza from my daughter's outing and an egg for breakfast.  I had quite a few calories left so I allowed myself a couple of snacks for the day.  I found some yellow squash and zucchini on sale.  I bought a bunch of them.  I figured that would be perfect in case my 5oz of meat I budgeted wasn't enough.   A 1/2 cup of baked veggies was only around 50 calories.  I weighed my meat and realized that 5oz was plenty.  When I was through with my plate, I went back for seconds just on the veggies.  Oh how great they were.  See you dice up all your veggies as seen in the photo.  I use an olive oil seasoning that I make to lightly coat them.  I cut up around 4 zucchini's, 4 squash and 3 bell peppers.  I tossed the whole thing with about 3 tablespoons of the olive oil mix (Mix now available @  http://happyhousebunkie.blogspot.com/2017/01/olive-oil-seasoning-blend.html ).  Bake at 450 for 35-40 minutes.   When done, take out of the oven and lightly salt and pepper it.  That's it!  Yuuuuumy.    I checked my calories at the end of the day and realized I still had a few more calories I could have.  So I had a half of a half serving of the leftover turtle cake.  I finished the day with a total of 1392 calories for the day.   That is 62 calories over my goal.   Damn that turtle cake.   See if your like me, make the temptation go away!  It really does need to go away.  Its just so darn delicious.  Ugh..........   I have a girl get together Friday night.  If the cake is still there it's coming with me.  I need help eating this cake!  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Smoked Sausage & Egg Breakfast

One of our favorite southern breakfast meals is smoked sausage and eggs.  You cut the sausage in chunks and brown on all sides.  Scramble 1 or 2 eggs and stir in the skillet with the sausage till the eggs are done.  It is sooooooooo good.  Well that is what I had this morning.  I put those ingredients in the My Fitness Pal.  Amazingly it was not that high in calories.  It was only 250 calories and a lot of food.  So much that I was not hungry for a snack.  I knew that lunch was my leftover crock pot chicken and had already entered that in my food diary.  The unknown was supper.   I went to exercise at the hospital.  I done 20 minutes of cardio and the rest of my hour doing weight training.  I have been doing the same weight and reps for quite some time.  I increased everything by 1.  Oh how just that one made my muscles work extra hard.   My sister invited us over for rice and gravy.  I portioned me about 3oz of beef, 1/3 cup of rice and 1/3 cup of red beans.  I still felt a little hungry and got a second 1/3 cup of red beans.  I really wish that birthday cake would disappear,  I hate for it to go to waste and i got a half of a half serving lol.  Ugh the will power is weak for chocolate.  That is why I don't buy any junk food.  If it's there I feel obligated to eat it.  Like the time I was hungry for a Little Debbie swiss roll.   I purchased a box from the Dollar Store and ate one package out of the box.  The rest of the box was supposed to spread out through many weeks.  Well the next day I said "oh I can eat just one more", then the next day the same thing etc....  Well by the end of the first week the box was empty.  Now if I crave a swiss roll I just get $.52 out of my wallet and go to the convenient store and just get one.  Then I don't have a box to eat, just the one.  It satisfies my cravings very well.   Maybe that is what you need to do too.  I finished the day with a total of 1305 calories for the day.   That is under my calorie goal.   If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes! Crock Pot Chicken Rice & Gravy

My day started off great, I knew what was for breakfast and lunch.  I entered those meals in the My Fitness Pal.  I had plenty of calories left for the day.  For breakfast I tried this oatmeal with flax seed.  I have to say it held me pretty well.  I was not hungry for a morning snack.  If you are like me and really don't like oatmeal use milk instead of the water to make it.  It tastes sooo much better.  I had my leftover fish for lunch.  I was not sure what was for supper.  I did my 45 minutes of cardio when I got home from work.  My mom had made a crock pot chicken gravy, rice and some steamed broccoli and cauliflower.  I can say it was amazing.  She said it only consisted of chicken, mushrooms, bell peppers and onions.  Amazingly I still had almost 200 calories to spare.  So I treated myself to leftover cake for desert.   Only 1/2 a serving of cake.  I finished the day with a total of 1338 calories for the day.   That is over by 8 calories.    I have to say that is pretty darn good.  I got comfort food of rice and gravy and desert!  If you like my meal ideas just check out my diary for a list of ingredients for that meal.  And yes!
